It really is comfort food at its very best. I have enjoyed this most when tired, at the end of a long day when there is nothing I want to cook, I cant think what I want to eat and then I remember this dish!   It’s also great for breakfast when you fancy something a little different, and instead of bread on the side, some crispy bacon compliments it fantastically.

The beauty of this dish is that it’s made solely from store cupboard ingredients, so truly is one of those dishes which you can whip up whenever you are lost for anything to cook.  On the flip side, you can give it a twist by adding a whole host of different ingredients to the tomatoes.

These are a Few of my Favourite Things...


Let Me Ask, What Would Be Your Last Meal?


Difficult question isn’t it? One I have been asked many times, and it always gets me thinking. However, on reflection, I think some of the most satisfying meals I have eaten have been dishes like these, foods you prepare rather than cook. They take little or no effort, they have nothing to do with skill, yet they have everything to do with great quality produce.  That’s what it’s all about. Find something you love and put it together on a plate to make it sing!

Raw Fish 

Sashimi has to be the perfect way to enjoy fresh fish at its best. I like to take mine from the fridge a short while before serving so I get the full impact of flavour from the fish, and then serve just simply with some ginger, wasabi, lemon or soy. Even au naturel is beautiful and delicate, or make a dipping sauce with flavours which balance - whichever way, the star has to be the fish. Ceviche, another big favourite of mine, very similar to Sashimi, though traditionally you would chop up the fish and add a few more ingredients as well as citrus which then cures the fish (though I have to say I prefer to slice my fish).

I have loved beautiful big beef tomatoes since I was a small child visiting France and I used to have these for lunch with crusty french baguette and lashings of salty french butter.  There, the tomatoes were always so ripe, but not over ripe and you could taste the sweetness. This paired with the saltiness of the butter, and when the two soaked into crusty bread, made it almost slightly pink with the juice of the tomato, was heaven on a plate, and I simply needed nothing more. In fact I went on as an adult to have this for breakfast quite often when in France, it was a great fresh way to start the day.

The tomato I used here was from Italy and cost £4.30 for one which although sounds expensive,  as a massive meat eater, I can quite honestly say that this dish is always as satisfying and hearty as any steak meal. For an added twist, I have crumbled Graceburn cheese on top, drizzled with olive oil, balsamic glaze and sprinkled lightly with micro basil.


I guess I haven’t answered the big question either though have I? However it still remains a difficult one for me as I hope to continue to discover new tastes, more surprises so I have an even wider variety of choice - until then.....well these are two of my favourite things, and watch this space for more to come.

Dining and Dogs - Not a Good Mix


Let Me Ask, Why Not Leave Them At Home?


Now I get that they may have gone for a walk and then you have stopped off at the pub for a drink, but the two should be separate activities. Enjoy the walk with your dog, don’t then punish it and everyone else by taking it into the pub. 

I don’t agree with dogs in pubs, restaurants, hotels, cafe’s, in fact anywhere where they serve food of any kind.  It simply isn’t right,  is not a good mix, and quite frankly should be stopped! Talk about smoking being banned, lets put a ban on dogs! Caveat here, apart from guide dogs, of course, it goes without saying. But It is simply disgusting that they should be around people anywhere who are eating, for one, and with hotels, I stay away a lot of the time and seriously, they should not be allowed to stay in the rooms, what are kennels for?   

The owners are irresponsible as they do nothing to help the situation, if the dog is barking they won’t take it outside or deal with it, they let it bark. If the dog jumps up at someone, they say it’s affectionate and harmless! However if a small child were to behave in much the same way there would be many an upturned nose!  

The barking is very intrusive, yes, and can ruin an occasion, however it is the smell which is most off putting and in some places you can tell there is a dog present even before seeing it. If you are going there to eat, frankly it’s a right put off. I say, bring back the smoking, at least it would detract from the smell of dog!

Who doesn’t Love a Curry?


This is an Uncomplicated Curry Recipe Anyone Can try, Everyone Will Love


The beauty of this recipe is that when you make it for guests they will think you have been cooking for hours, however it’s child’s play, so quick and simple, so much so I passed it on to my son when he was at Uni.  It was especially good for him because he was able to adapt it according to what meat he had leftover, or what he could afford and it became a real hit.

I have described It here using leftover chicken from the roast which is excellent for this recipe, and have loved it using wild king prawns which can be deveined, shelled and put in towards the end, so succulent. Any fresh meat, fish, shellfish or vegetables are ideal.

I use a bought ready made curry paste as this is what makes the dish easy and quick, these pastes are excellent as they have been developed using all the correct spices which would take you a lot longer to perfect, therefore all the hard work has been done for you. All you need to do is make the decision on which one is right for your recipe!

Restaurant Recommendations UK - great places to eat out!


The North South divide?


So it may seem, though merely because I am rarely in the North. Evidently, something I need to remedy. This, anyway, is by no means an exhaustible list, but are some of the restaurants where I have enjoyed a meal and have visited more than once.  In my opinion it is vital to go back after a first time to gauge how consistent they are, so below you will find the places where I confidently visit knowing I will have a great meal. 
Unfortunately this is a bit like kissing frogs to find a prince these days in the UK, as the good restaurants are a minority when it should be the other way around. All I can say is, I have had to ‘kiss many grotty frogs’ to end up with a handful of delights!

Using leftover rice - Spicy Stir Fried Rice with Sausage


A satisfying supper perhaps?


This is a modest dish I like to make each time I have leftover rice, which is every time I make anything with rice! Always make sure you store the rice in the fridge over night, and ensure you heat it until it is piping hot before serving.  I made this with sausage, however, to be honest, I use whichever ingredients I have available at the time, as long as they are tasty and complement each other. It’s good to experiment with such a simple dish.  Go on and try it!

How do we feel about food?


Let me ask, does every person who has a passion for food have an unnatural relationship with it?


Do food bloggers eventually decide to write about food because of past issues, like illness, or weight?  Take me, I fall into both camps. I’ve suffered with Migraines since a teenager, so nearly for 40 years and believe food has a huge connection with those, and my weight, like so many other women, I have struggled with my weight for the last 10 years now where it is volatile going up and down, whereas when I was younger I could eat whatever I wanted.  Now however, I just need to be that little bit more discerning (very sadly)!

So lets first look at pain, linked with food.


I will focus on a migraineur for now as this is my experience but pain is pain at the end of the day - and remember, caveat here - if you have read my ‘About Me’, anything I write throughout my blog is ‘through my eyes only’ , my opinions, is what I feel, think and understand, have read, researched and taken on board.  To those who may disagree with what I have to say and certainly feel free, come back and tell me as I would love to hear your thoughts, but please do not stop or change any medications as a result of anything I write.  By all means change your lifestyle for the better, which I hope you will along the way while you pick up some tips from me and others as you need and want to.

So that being said, pain is aggravated by sugar! We love sugar! Our brains simply crave it (because it is not our bodies that do the craving, but our brains), and as we eat more and more of the stuff we want more and more and the wheel keeps on turning. Why is pain aggravated by sugar? Simply because it causes inflammation, and inflammation in turn causes pain.

I will talk a lot more about sugar throughout my blog, however, this is not a carb free zone by any means and lots of my recipes are mixed. The reason I choose to talk about it is because it has a huge connection to both pain and weight which are two issues which are close to my heart.

Of course there are other foods linked with Migraines which I could mention, however those, independently, have not caused me any trouble at all, and being a chronic sufferer I have come to think of those as the ‘label’ items which are there to try and guide us as nobody really knows what can cause a migraine as there are so many different variants. For example, I could eat a whole pack of cheese, and I always eat the strongest as you’ll come to know, and won’t have the slightest pain, and my favourite wine is red! So for now, we will leave those poor singled out suspects alone - they truly don’t deserve the bad press!

Pain and food are very closely linked, and health and food more closely. Before pharmaceutical tablets were produced there were only herbs, berries, natural remedies as naturally occurring chemicals in plants have been used since pre-history.

What about Weight? 

Although I am not overweight, I would like to be a different weight, or should I say its not so much the weight, I mean who actually cares what the scales say, its the mirror that counts, right? I want to look better. Food can do that. In fact everyone will tell you food and exercise, and they are not wrong, food and exercise will get you there faster and fitter and you will certainly be more toned, however food is the ‘key’!  Try starving yourself, literally for 14 days with no exercise - you will lose weight. That’s not a challenge by the way! 

My husband recently did the Beef, Salt & Water diet for 16 days and lost 21 pounds. I mean it was very boring, just Beef, no other meat at all, with no other condiments other than salt and nothing else other than water to drink! He didn’t exercise at all, however his job is quite physical, relatively, so he continued with that, but that was not a change of lifestyle - so good going 👍

I think you see the theme here...sugar? Sugar is the enemy not fat! When my husband did the beef, salt, water diet, he could eat as much fat as he liked. Sirloin with huge amounts of fat, tomahawk, T-Bone with a huge rim of fat, Rib-Eye marbled with fat, you get my point. Fat doesn’t make you fat! Who knew?
Well, lots of people really, but one thing to remember, there are good fats and bad fats and that is important. 

So here are the main messages:


  •  Don’t eat sugar if you can, cut it out altogether, however this is real tricky as almost everything these days has sugar added - Bread has sugar in it, crackers, crisps, breakfast cereal, potatoes, the list goes on and on.  Basically the carbohydrates break down in your gut and turn into sugar. For every 4g of carbs you are taking in 1 tsp of sugar, you may as well spoon it in out of the sugar bowl.
  • Eat plenty of protein through the day. Meat is good, but good meat, always trust organic as they are not routinely fed antibiotics and wormers. Free roaming pasture fed cows are good because they have naturally foraged and not forced grains which means their meat is generally higher in vitamin E. There are many good reasons for eating plenty of protein.  It will satiate you for longer, it increases your muscle strength and is good for your bones, it helps to reduce cravings, it helps to increase fat burning, it lowers your blood pressure, it helps to maintain weight loss, and it helps your body repair itself post injury.
  • Ensure you are having fats, but good fats. There are lots of different fats which are bad for your digestive system and body and which will also not aid weight loss however, natural good fats are needed by the body - these include things like: Olive oil, avocados, butter, nuts and heavy cream.
  • Balance good carbohydrates. Naturally occurring sugars will be in unprocessed carbs like Fruits, Vegetables (some), beans, we still want all these because we love our veg!
  • Never eat low fat or diet produce! Low fat makes you fat - Put simply, these are an industry disgrace. They took out the naturally occurring fat in these products which would have been good for you and made the product taste good and then replaced it with sugar or sugar substitute to ensure the product still tasted acceptable only now the product is bad for you and your weight.

We will come back to health as a topic as this is an important issue and although you will begin to discover how much I love food, you will also learn how much I love healthy food, so even though there will be some decadent recipes here and there, There will be something for everyone hopefully.

About me - Who am I?


Vussey, but not Fussey.


Though I am frustrated, bitter, disappointed, angry and annoyed.

However, I suspect I am not the only one and this platform is perfect for me to share the good and bad with all foodies of all kinds, for people who are passionate about food. You can find anything you want now just by searching, which makes it even more important to share - and importantly, good food gives good emotions and each time I enjoyed something, I wanted others to enjoy it too - its as simple as that!

So....who am I?


Just a simple soul actually, with a passion for food which won’t go away! I have had a love of food for as long as I can remember, but if I had to put a timescale on it, I would say it goes back to when I was perhaps 8 or 10 years old and used to travel to France with my family. 

The variety of the food in the 70’s and 80’s in France was mind blowing to a small child with flavours which could not compare. I started to experiment and understand more about food, interspersed with ‘fried tinned spam and beans’ cooked by the roadside on a camping stove on the journey through France to keep costs down (with four children it was expensive for mum and dad).

Growing up I carried my taste for the Mediterranean style of eating with me, and I would say this is probably my preferred cuisine, although, I can, and will, eat almost anything, disliking only one item of food - raw celery!

And....what is this all about?

So what do I hope to achieve? Ultimately, I want to share my passion with others, like you, I hope you will share your passion with others, and me - also I hope to give a little insight into nutrition, food, eating well, enjoying food and peoples habits, through my eyes only.
